These cheesy potatoes have a secret ingredient – one you’ll never skip again!

2 T Butter

5 lbs Summertime Gold Potatoes

2 C Heavy Cream

3/4 tsp Salt

1/2 tsp Pepper

2 pkg (5.6 oz ea) Boursin Cheese, garlic & herb

Grated Parmesan Cheese


Preheat oven to 400 degrees. Spray an 8″x11″ casserole dish with non-stick spray and dot bottom with butter. Place in the oven until butter melts, then remove.

In a medium saucepan, heat cream, Boursin Cheese, salt and pepper over medium-low heat until the cheese melts and has a smooth consistency.

Pre-cook potatoes in microwave for 4 – 6 minutes, slice thinly. Place sliced potatoes in a large bowl and add cheese mixture. Thoroughly coat.  Stack potatoes in the casserole dish, as pictured.  Potatoes should be packed tightly.

Pour remaining cheese mixture over the potatoes, cover with foil and bake 30 minutes. Remove foil and bake another 30 minutes. Sprinkle Parmesan Cheese on top and bake another 15 – 30 minutes, until golden brown.

Remove from oven, let rest for 10 minutes and serve!
