Sausage, Peppers and Potatoes

This dish is a perfect one pan meal.
5 – 6 Summertime Red Potatoes, cut into bite-sized pieces

1 lb Italian sausage links

1 orange bell pepper, chopped

1 red bell pepper, chopped

1/2 sweet onion, chopped

1 tsp paprika

1 tsp rosemary

1 tsp garlic powder

1 tlbs olive oil

In a large bowl, toss potatoes with 1 tlb olive oil, rosemary, paprika and garlic powder until well coated. Put potatoes in skillet over medium heat and cover with a lid.  Cook for 15 minutes, turning occasionally.  Set aside and keep warm.

Put remaining olive oil in a large skillet and preheat over medium heat. Cut the sausage into 1″ pieces and add to the heated skillet.  Cook until sausages are browned on all sides and the middle is cooked through.  Drain excess oil from the pan and add peppers and onions.  Cover and cook 10 more minutes until the vegetables are tender.  Add potatoes and combine.  Salt and pepper to taste.
